Description

Amazing Blueberry Cream Cheese Muffins are soft, bakery-style muffins filled with juicy blueberries and a sweet, creamy cream cheese center—perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix oil, milk, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Gently fold in blueberries.
  6. In a small bowl, mix cream cheese, powdered sugar, and lemon zest until smooth.
  7. Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with more batter.
  8. Bake for 20–25 minutes until tops are lightly golden and a toothpick inserted comes out clean.
  9. Cool for 10 minutes before serving.

Notes

  • Do not overmix the batter to keep muffins tender.
  • If using frozen blueberries, do not thaw.
  • Store leftovers in the refrigerator.
