Amazing Blueberry Cream Cheese Muffins are soft, bakery-style muffins filled with juicy blueberries and a sweet, creamy cream cheese center—perfect for breakfast or a snack.
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, mix oil, milk, eggs, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Gently fold in blueberries.
- In a small bowl, mix cream cheese, powdered sugar, and lemon zest until smooth.
- Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with more batter.
- Bake for 20–25 minutes until tops are lightly golden and a toothpick inserted comes out clean.
- Cool for 10 minutes before serving.
Notes
- Do not overmix the batter to keep muffins tender.
- If using frozen blueberries, do not thaw.
- Store leftovers in the refrigerator.
