Description

Authentic Sicilian Pork Chops are pan-seared and simmered in a vibrant sauce of tomatoes, onions, olives, capers, garlic, and fresh herbs — a rustic, hearty dish inspired by traditional Sicilian flavors.


Ingredients

  • 4 bone-in pork chops
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup green olives, sliced
  • 2 tbsp capers, drained
  • 1 tsp red pepper flakes (optional)
  • 1 tbsp balsamic vinegar or red wine vinegar
  • Fresh basil or parsley for garnish


Instructions

  1. Season pork chops with salt, pepper, oregano, and garlic powder on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add onions and sauté until softened. Add garlic and cook for 30 seconds.
  4. Stir in crushed tomatoes, chicken broth, olives, capers, red pepper flakes, and vinegar.
  5. Return pork chops to the skillet, nestling them into the sauce. Reduce heat to medium-low.
  6. Simmer for 20–25 minutes, spooning sauce over the chops occasionally, until tender and cooked through.
  7. Garnish with fresh basil or parsley and serve warm.

  • For richer flavor, add a splash of dry white wine when sautéing the onions.
  • Serve with crusty bread, pasta, polenta, or roasted potatoes.
