Authentic Sicilian Pork Chops are pan-seared and simmered in a vibrant sauce of tomatoes, onions, olives, capers, garlic, and fresh herbs — a rustic, hearty dish inspired by traditional Sicilian flavors.
Ingredients
- 4 bone-in pork chops
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1/2 cup green olives, sliced
- 2 tbsp capers, drained
- 1 tsp red pepper flakes (optional)
- 1 tbsp balsamic vinegar or red wine vinegar
- Fresh basil or parsley for garnish
Instructions
- Season pork chops with salt, pepper, oregano, and garlic powder on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden. Remove and set aside.
- In the same skillet, add onions and sauté until softened. Add garlic and cook for 30 seconds.
- Stir in crushed tomatoes, chicken broth, olives, capers, red pepper flakes, and vinegar.
- Return pork chops to the skillet, nestling them into the sauce. Reduce heat to medium-low.
- Simmer for 20–25 minutes, spooning sauce over the chops occasionally, until tender and cooked through.
- Garnish with fresh basil or parsley and serve warm.
Notes
- For richer flavor, add a splash of dry white wine when sautéing the onions.
- Serve with crusty bread, pasta, polenta, or roasted potatoes.
- Substitute cherry tomatoes for a fresher, lighter sauce.
