Ingredients
- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream or plain yogurt
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- Caramel Frosting:
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup milk or heavy cream
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- Optional Caramel Drizzle: 1/4 cup caramel sauce for topping
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or a 9×13-inch baking dish.
- In a large mixing bowl, cream together butter and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in mashed bananas, vanilla extract, and sour cream.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour batter into prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool completely before frosting.
- For the caramel frosting: In a saucepan, melt butter over medium heat. Add brown sugar and cook, stirring constantly, for 2 minutes until dissolved. Slowly whisk in milk or cream and bring to a gentle boil. Remove from heat and cool slightly, then beat in powdered sugar and vanilla until smooth and creamy.
- Frost the cooled cake and drizzle with caramel sauce before serving.
