Description
Bang Bang Chicken Fried Rice is a flavorful fusion dish combining crispy chicken, savory fried rice, and a creamy sweet-spicy Bang Bang sauce for a satisfying meal.
Ingredients
- 2 cups cooked jasmine rice (cold)
- 1 cup chicken breast, cooked and diced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 tablespoons mayonnaise
- 2 tablespoons sweet chili sauce
- 1 teaspoon sriracha (adjust to taste)
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add beaten eggs and scramble until just set. Remove from pan and set aside.
- Add remaining oil to the pan, then sauté garlic until fragrant.
- Add peas and carrots, cooking for 2–3 minutes.
- Add cooked rice, breaking up clumps, and stir-fry for 3–4 minutes.
- Stir in soy sauce, sesame oil, salt, and pepper.
- Add chicken and scrambled eggs back to the pan and mix well.
- Turn off heat and drizzle Bang Bang sauce over the rice. Toss gently to combine.
- Garnish with sliced green onions and serve hot.
Notes
- Use day-old rice for best texture.
- Adjust sauce spiciness by increasing or reducing sriracha.
- Chicken can be grilled, fried, or air-fried.
