Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 (10 oz) can red enchilada sauce
- 1 (14.5 oz) can diced tomatoes with green chilies
- 1/2 cup sour cream
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, sliced (for garnish)
- Fresh cilantro, chopped (optional garnish)
Instructions
- Cook tortellini according to package directions. Drain and set aside.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning, enchilada sauce, and diced tomatoes. Simmer for 5 minutes.
- Reduce heat to low and stir in sour cream until sauce is creamy.
- Add cooked tortellini to the skillet and toss to coat with sauce.
- Sprinkle cheddar and Monterey Jack cheese over the top. Cover skillet and cook for 2-3 minutes until cheese is melted.
- Garnish with green onions and cilantro before serving.
Notes
- Use ground turkey or chicken instead of beef for a lighter version.
- Spice it up with extra jalapeños or hot enchilada sauce.
