Description

A hearty fusion dish combining cheesy tortellini pasta with seasoned ground beef, enchilada sauce, and melted cheese for a comforting Tex-Mex-inspired meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 (10 oz) can red enchilada sauce
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1/2 cup sour cream
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (optional garnish)


Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning, enchilada sauce, and diced tomatoes. Simmer for 5 minutes.
  4. Reduce heat to low and stir in sour cream until sauce is creamy.
  5. Add cooked tortellini to the skillet and toss to coat with sauce.
  6. Sprinkle cheddar and Monterey Jack cheese over the top. Cover skillet and cook for 2-3 minutes until cheese is melted.
  7. Garnish with green onions and cilantro before serving.
