This Best-Ever Blueberry Thyme Chicken features juicy, pan-seared chicken smothered in a luscious blueberry-thyme sauce that’s sweet, savory, and slightly tangy — an elegant yet easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 cup fresh or frozen blueberries
  • 1/3 cup chicken broth
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (plus extra for garnish)
  • 1 tbsp lemon juice


Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add blueberries, chicken broth, balsamic vinegar, honey, garlic, and thyme.
  4. Simmer for 5–7 minutes, gently smashing some blueberries to thicken the sauce.
  5. Stir in lemon juice and return chicken to the skillet, spooning sauce over the top. Simmer 2–3 more minutes.
  6. Garnish with fresh thyme and serve warm.

  • Use frozen blueberries without thawing — just cook a minute or two longer.
