This Best-Ever Blueberry Thyme Chicken features juicy, pan-seared chicken smothered in a luscious blueberry-thyme sauce that’s sweet, savory, and slightly tangy — an elegant yet easy weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and black pepper to taste
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup fresh or frozen blueberries
- 1/3 cup chicken broth
- 2 tbsp balsamic vinegar
- 2 tbsp honey or maple syrup
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves (plus extra for garnish)
- 1 tbsp lemon juice
Instructions
- Season chicken with salt, pepper, garlic powder, and paprika.
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add blueberries, chicken broth, balsamic vinegar, honey, garlic, and thyme.
- Simmer for 5–7 minutes, gently smashing some blueberries to thicken the sauce.
- Stir in lemon juice and return chicken to the skillet, spooning sauce over the top. Simmer 2–3 more minutes.
- Garnish with fresh thyme and serve warm.
Notes
- Use frozen blueberries without thawing — just cook a minute or two longer.
- Add a splash of white wine for extra depth.
- Pairs beautifully with mashed potatoes, rice, or roasted veggies.
- For extra richness, stir in 1 tbsp cold butter at the end of cooking.
