Description
Soft, chewy, and bursting with fresh lemon flavor, these lemon brownies are a bright citrusy twist on the classic brownie with a tangy glaze on top.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup powdered sugar (for glaze)
- 2 tbsp lemon juice (for glaze)
- 1 tsp lemon zest (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add lemon zest, lemon juice, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix dry ingredients into wet mixture until just combined.
- Spread batter evenly into prepared pan and bake for 25–28 minutes, or until edges are golden and a toothpick inserted in the center comes out mostly clean.
- Cool completely before glazing.
- For glaze: whisk powdered sugar, lemon juice, and zest until smooth. Pour over cooled brownies and spread evenly.
- Allow glaze to set before cutting into squares.
Notes
- For extra tang, add more lemon juice or zest to the glaze.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Can be frozen (unglazed) for up to 2 months.
