Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add lemon zest, lemon juice, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Spread batter evenly into prepared pan and bake for 25–28 minutes, or until edges are golden and a toothpick inserted in the center comes out mostly clean.
  7. Cool completely before glazing.
  8. For glaze: whisk powdered sugar, lemon juice, and zest until smooth. Pour over cooled brownies and spread evenly.
  9. Allow glaze to set before cutting into squares.

Notes

  • For extra tang, add more lemon juice or zest to the glaze.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
