Description

A delightful no-bake treat combining the classic flavors of chocolate and peanut butter, Buckeye Graham Crackers feature creamy peanut butter filling sandwiched between crisp graham crackers and dipped in rich chocolate for a crunchy, sweet indulgence.


Ingredients

  • 1 sleeve (about 910 sheets) graham crackers, broken into halves
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups semisweet or milk chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smoother melting)


Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, beat together peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  3. Spread about 1 tablespoon of the peanut butter mixture evenly onto half of the graham cracker halves, then top each with another graham cracker to form sandwiches.
  4. Place the assembled sandwiches in the refrigerator for 15–20 minutes to firm up.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  6. Dip each graham sandwich halfway into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined baking sheet.
  7. Refrigerate for another 15–20 minutes or until the chocolate is set.
  8. Store in an airtight container in the fridge or at room temperature if your kitchen is cool.
