A delightful no-bake treat combining the classic flavors of chocolate and peanut butter, Buckeye Graham Crackers feature creamy peanut butter filling sandwiched between crisp graham crackers and dipped in rich chocolate for a crunchy, sweet indulgence.
Ingredients
- 1 sleeve (about 9–10 sheets) graham crackers, broken into halves
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups semisweet or milk chocolate chips
- 1 tbsp coconut oil or shortening (optional, for smoother melting)
Instructions
- Line a baking sheet with parchment paper.
- In a medium bowl, beat together peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
- Spread about 1 tablespoon of the peanut butter mixture evenly onto half of the graham cracker halves, then top each with another graham cracker to form sandwiches.
- Place the assembled sandwiches in the refrigerator for 15–20 minutes to firm up.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
- Dip each graham sandwich halfway into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined baking sheet.
- Refrigerate for another 15–20 minutes or until the chocolate is set.
- Store in an airtight container in the fridge or at room temperature if your kitchen is cool.
