Ingredients

  • 12 oz rigatoni pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 chicken breasts, sliced (halal)
  • 1 1/2 teaspoons Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Season chicken with Cajun seasoning, paprika, salt, and black pepper.
  4. Add chicken to the skillet and cook until golden and fully cooked. Remove and set aside.
  5. In the same skillet, sauté garlic until fragrant.
  6. Add chicken broth and heavy cream, stirring to combine.
  7. Add Velveeta cubes and stir until completely melted and smooth.
  8. Stir in Parmesan cheese until sauce thickens.
  9. Return chicken to the skillet and mix well.
  10. Add cooked rigatoni and toss until evenly coated.
  11. Remove from heat, garnish with parsley, and serve hot.
