A savory twist on comfort food, this Cheddar Bay Chicken Cobbler combines tender, creamy chicken filling with a buttery, cheesy Red Lobster-style biscuit topping baked to golden perfection.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 2 cups mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 cups Cheddar Bay biscuit mix (or 2 cups Bisquick + 1 cup shredded cheddar + 1 tsp garlic powder)
- 1 cup milk (for biscuit mix)
- 4 tbsp melted butter
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine chicken, vegetables, cream of chicken soup, chicken broth, 1/2 cup milk, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Pour the chicken mixture evenly into the prepared baking dish.
- In a separate bowl, mix biscuit mix, 1 cup milk, and shredded cheddar (if not using a pre-mixed Cheddar Bay mix). Stir until just combined.
- Spoon or pour the biscuit batter evenly over the chicken filling, spreading gently to cover.
- Bake for 30–35 minutes, or until the top is golden brown and cooked through.
- Meanwhile, combine melted butter with a pinch of garlic powder and parsley. Brush over the baked cobbler immediately after removing from the oven.
- Let cool for 5 minutes before serving.

- Use rotisserie chicken for quick prep.
- Add a pinch of cayenne pepper or hot sauce for a mild kick.
- Frozen vegetables can be added directly—no need to thaw.
- For extra richness, stir in 1/4 cup sour cream into the filling before baking.
