Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 cups Cheddar Bay biscuit mix (or 2 cups Bisquick + 1 cup shredded cheddar + 1 tsp garlic powder)
  • 1 cup milk (for biscuit mix)
  • 4 tbsp melted butter
  • 1 tbsp fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine chicken, vegetables, cream of chicken soup, chicken broth, 1/2 cup milk, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Pour the chicken mixture evenly into the prepared baking dish.
  4. In a separate bowl, mix biscuit mix, 1 cup milk, and shredded cheddar (if not using a pre-mixed Cheddar Bay mix). Stir until just combined.
  5. Spoon or pour the biscuit batter evenly over the chicken filling, spreading gently to cover.
  6. Bake for 30–35 minutes, or until the top is golden brown and cooked through.
  7. Meanwhile, combine melted butter with a pinch of garlic powder and parsley. Brush over the baked cobbler immediately after removing from the oven.
  8. Let cool for 5 minutes before serving.
