Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and sugar until combined.
- Press mixture firmly into the bottom of a greased 9-inch springform pan.
- In a bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Remove 1 cup of the cheesecake batter and mix with pumpkin puree, pumpkin pie spice, cinnamon, and salt.
- Pour plain cheesecake batter over the crust.
- Spoon pumpkin mixture on top and swirl gently with a knife.
- Bake for 45–50 minutes until center is slightly set.
- Cool completely, then refrigerate for at least 4 hours before serving.
Notes
- Do not overmix to avoid cracks.
- Chill overnight for best texture.
- Serve with whipped cream if desired.
