Description

Cheesecake with Pumpkin Swirl is a rich and creamy dessert that combines the classic flavor of vanilla cheesecake with a luscious pumpkin-spice swirl. It’s the perfect fall treat, offering a balance of tangy cream cheese and warm seasonal spices in every bite.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 cup sour cream
  • 1 tbsp all-purpose flour


Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined, then press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes and set aside to cool.
  3. In a large bowl, beat the cream cheese and 1 cup sugar until smooth and creamy. Add eggs one at a time, beating after each addition. Stir in vanilla and sour cream.
  4. Remove 1 cup of the cheesecake batter and set aside. To the remaining batter, add pumpkin puree, cinnamon, nutmeg, cloves, and flour. Mix until smooth.
  5. Pour half of the pumpkin batter over the crust. Add spoonfuls of the plain cheesecake batter on top, then layer the remaining pumpkin batter. Use a knife or skewer to gently swirl the two batters together for a marbled effect.
  6. Bake for 55–65 minutes, or until the center is almost set but still slightly wobbly.
  7. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight before serving.

  • For extra flavor, top with whipped cream and a sprinkle of cinnamon before serving.
  • Make sure all ingredients are at room temperature for a smooth texture.
  • You can substitute gingersnap crumbs for graham crackers for a spicier crust.
