Cheesy Rotel Beef Pasta is a comforting one-pot meal made with seasoned ground beef, tender pasta, Rotel tomatoes, and a creamy, cheesy sauce. It’s quick, hearty, and perfect for busy weeknight dinners.


Ingredients

  • 1 lb (450 g) ground beef
  • 12 oz (340 g) pasta (penne or rotini)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add diced onion and cook until softened.
  3. Add ground beef and cook until browned; drain excess fat.
  4. Stir in garlic, paprika, chili powder, salt, and black pepper.
  5. Add Rotel tomatoes, beef broth, and pasta. Stir well.
  6. Bring to a boil, then reduce heat and simmer covered for 12–15 minutes, stirring occasionally, until pasta is tender.
  7. Stir in heavy cream and shredded cheese until melted and creamy.
  8. Remove from heat and serve hot.

Notes

  • Use spicy or mild Rotel based on preference.
  • Add cooked bacon or jalapeños for extra flavor.
