Description
Cheesy Rotel Beef Pasta is a comforting one-pot meal made with seasoned ground beef, tender pasta, Rotel tomatoes, and a creamy, cheesy sauce. It’s quick, hearty, and perfect for busy weeknight dinners.
Ingredients
- 1 lb (450 g) ground beef
- 12 oz (340 g) pasta (penne or rotini)
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 2 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add diced onion and cook until softened.
- Add ground beef and cook until browned; drain excess fat.
- Stir in garlic, paprika, chili powder, salt, and black pepper.
- Add Rotel tomatoes, beef broth, and pasta. Stir well.
- Bring to a boil, then reduce heat and simmer covered for 12–15 minutes, stirring occasionally, until pasta is tender.
- Stir in heavy cream and shredded cheese until melted and creamy.
- Remove from heat and serve hot.
Notes
- Use spicy or mild Rotel based on preference.
- Add cooked bacon or jalapeños for extra flavor.
- Best served immediately while creamy.
