Description
A luscious twist on the classic Italian dessert, this cherry amaretto tiramisu layers espresso-soaked ladyfingers with mascarpone cream, sweet cherries, and a hint of almond liqueur.
Ingredients
- 1 1/2 cups strong brewed espresso or coffee, cooled
- 1/3 cup amaretto liqueur
- 1 (8 oz) package mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 24 ladyfinger cookies
- 2 cups pitted sweet cherries (fresh or canned, drained)
- 2 tbsp cocoa powder (for dusting)
- 1/4 cup slivered almonds (optional, for garnish)
Instructions
- In a shallow dish, combine espresso and amaretto liqueur. Set aside.
- In a large bowl, beat mascarpone cheese until smooth.
- In another bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold whipped cream into mascarpone mixture.
- Quickly dip ladyfingers into the espresso-amaretto mixture (do not soak), then arrange a single layer in the bottom of a serving dish.
- Spread half of the mascarpone cream over the ladyfingers, then top with half of the cherries.
- Repeat layers with remaining ladyfingers, cream, and cherries.
- Dust with cocoa powder and garnish with slivered almonds if desired.
- Refrigerate at least 4 hours, preferably overnight, before serving.
Notes
- For a non-alcoholic version, replace amaretto with almond extract and extra coffee.
- Best served chilled to allow flavors to meld.
- Can be made in a trifle dish or individual cups for presentation.
