Description

A luscious twist on the classic Italian dessert, this cherry amaretto tiramisu layers espresso-soaked ladyfingers with mascarpone cream, sweet cherries, and a hint of almond liqueur.


Ingredients

  • 1 1/2 cups strong brewed espresso or coffee, cooled
  • 1/3 cup amaretto liqueur
  • 1 (8 oz) package mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 24 ladyfinger cookies
  • 2 cups pitted sweet cherries (fresh or canned, drained)
  • 2 tbsp cocoa powder (for dusting)
  • 1/4 cup slivered almonds (optional, for garnish)


Instructions

  1. In a shallow dish, combine espresso and amaretto liqueur. Set aside.
  2. In a large bowl, beat mascarpone cheese until smooth.
  3. In another bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold whipped cream into mascarpone mixture.
  4. Quickly dip ladyfingers into the espresso-amaretto mixture (do not soak), then arrange a single layer in the bottom of a serving dish.
  5. Spread half of the mascarpone cream over the ladyfingers, then top with half of the cherries.
  6. Repeat layers with remaining ladyfingers, cream, and cherries.
  7. Dust with cocoa powder and garnish with slivered almonds if desired.
  8. Refrigerate at least 4 hours, preferably overnight, before serving.

Notes

  • For a non-alcoholic version, replace amaretto with almond extract and extra coffee.
  • Best served chilled to allow flavors to meld.
  • Can be made in a trifle dish or individual cups for presentation.
