Description

Soft, chewy cookies flavored with pumpkin, warm spices, and sweet maple glaze – the perfect fall-inspired treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1 1/2 cups white chocolate chips (optional)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp maple syrup (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in egg, vanilla, pumpkin puree, and maple syrup until smooth.
  5. Gradually add dry ingredients to wet mixture and stir until just combined. Fold in white chocolate chips if using.
  6. Scoop dough into 2-tablespoon portions and place on prepared baking sheet 2 inches apart.
  7. Bake for 11–13 minutes, until edges are set but centers are still soft. Cool on baking sheet for 5 minutes before transferring to a wire rack.
  8. For glaze: whisk powdered sugar with maple syrup until smooth. Drizzle over cooled cookies.

Notes

  • Do not overbake – cookies will firm up as they cool.
  • Store in an airtight container for up to 5 days.
  • Freeze unglazed cookies for up to 2 months.
