Chicken Pot Pie Pasta is a comforting one-pot meal that combines tender chicken, hearty pasta, and classic pot pie vegetables in a rich, creamy sauce.


Ingredients

  • 2 cups cooked chicken breast, diced
  • 12 oz penne or rotini pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1/2 cup frozen corn
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/3 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet or pot, heat butter and olive oil over medium heat.
  3. Add onion and sauté until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the mixture and stir continuously for 1 minute.
  6. Gradually whisk in chicken broth until smooth.
  7. Add heavy cream, salt, pepper, and thyme, stirring until thickened.
  8. Stir in cooked chicken, peas, carrots, and corn.
  9. Add cooked pasta and mix until well coated.
  10. Stir in Parmesan cheese until melted.
  11. Garnish with parsley and serve warm.
