Ingredients
- 2 cups cooked chicken breast, diced
- 12 oz penne or rotini pasta
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1/2 cup frozen corn
- 2 cups chicken broth
- 1 cup heavy cream
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet or pot, heat butter and olive oil over medium heat.
- Add onion and sauté until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the mixture and stir continuously for 1 minute.
- Gradually whisk in chicken broth until smooth.
- Add heavy cream, salt, pepper, and thyme, stirring until thickened.
- Stir in cooked chicken, peas, carrots, and corn.
- Add cooked pasta and mix until well coated.
- Stir in Parmesan cheese until melted.
- Garnish with parsley and serve warm.
Notes
- Use rotisserie chicken for convenience.
- Add mushrooms for extra depth of flavor.
- Leftovers reheat well with a splash of milk.
