Ingredients
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 package (16 oz) potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through.
- Remove chicken from skillet and set aside.
- In the same skillet, sauté garlic until fragrant.
- Add gnocchi and chicken broth, stirring to combine.
- Simmer for 2–3 minutes until gnocchi is tender.
- Stir in heavy cream and Parmesan cheese until sauce thickens.
- Add cooked chicken and spinach, stirring until spinach wilts.
- Remove from heat and garnish with parsley before serving.
