Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 package (16 oz) potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add diced chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, sauté garlic until fragrant.
  5. Add gnocchi and chicken broth, stirring to combine.
  6. Simmer for 2–3 minutes until gnocchi is tender.
  7. Stir in heavy cream and Parmesan cheese until sauce thickens.
  8. Add cooked chicken and spinach, stirring until spinach wilts.
  9. Remove from heat and garnish with parsley before serving.
