Ingredients
- 2 lbs baby potatoes, halved
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp unsalted butter
- 1 tsp dried Italian seasoning
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add baby potatoes and cook until fork-tender, about 12–15 minutes. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
- Stir in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese, Italian seasoning, salt, and pepper. Stir until sauce thickens slightly.
- Add cooked potatoes to the skillet and toss until fully coated in the creamy garlic sauce.
- Garnish with fresh parsley and serve warm.

- For extra flavor, roast the potatoes before tossing them in the sauce.
- Use half-and-half instead of heavy cream for a lighter version.
