Description

Creamy Steak & Potato Soup is a rich, hearty, and comforting dish that combines tender bites of seared steak, buttery potatoes, and a velvety cream base. Infused with garlic, herbs, and melted cheese, this soup is the ultimate cozy meal for chilly nights or indulgent dinners.


Ingredients

  • 1 lb sirloin steak or ribeye, cut into small cubes
  • 2 tablespoons olive oil (divided)
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, peeled and diced (Yukon gold or russet)
  • 3 cups beef broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 1 cup shredded cheddar cheese (optional, for extra creaminess)
  • 2 green onions, chopped (for garnish)
  • Crumbled bacon or fresh parsley, for serving (optional)


Instructions

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add steak cubes, season with salt and pepper, and sear for 2–3 minutes per side until browned. Remove and set aside.
  2. In the same pot, add remaining olive oil, onion, and garlic. Sauté for 2–3 minutes until fragrant and softened.
  3. Add diced potatoes, thyme, paprika, and beef broth. Bring to a boil, then reduce heat and simmer for 12–15 minutes, until potatoes are tender.
  4. In a separate small saucepan, melt butter over medium heat. Whisk in flour to make a roux and cook for 1 minute. Slowly whisk in cream until smooth and slightly thickened.
  5. Stir the cream mixture into the soup base. Add seared steak back to the pot and simmer gently for 5 minutes to combine flavors.
  6. If desired, stir in shredded cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve hot, garnished with green onions, bacon, or parsley.

  • Use leftover grilled steak or roast for extra flavor and convenience.
