Ingredients
- 1 lb sirloin steak or ribeye, cut into small cubes
- 2 tablespoons olive oil (divided)
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 3 cups potatoes, peeled and diced (Yukon gold or russet)
- 3 cups beef broth
- 1 cup heavy cream (or half-and-half)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt, to taste
- 1 cup shredded cheddar cheese (optional, for extra creaminess)
- 2 green onions, chopped (for garnish)
- Crumbled bacon or fresh parsley, for serving (optional)
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add steak cubes, season with salt and pepper, and sear for 2–3 minutes per side until browned. Remove and set aside.
- In the same pot, add remaining olive oil, onion, and garlic. Sauté for 2–3 minutes until fragrant and softened.
- Add diced potatoes, thyme, paprika, and beef broth. Bring to a boil, then reduce heat and simmer for 12–15 minutes, until potatoes are tender.
- In a separate small saucepan, melt butter over medium heat. Whisk in flour to make a roux and cook for 1 minute. Slowly whisk in cream until smooth and slightly thickened.
- Stir the cream mixture into the soup base. Add seared steak back to the pot and simmer gently for 5 minutes to combine flavors.
- If desired, stir in shredded cheddar cheese until melted and creamy.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with green onions, bacon, or parsley.
