- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup bourbon (or apple juice for non-alcoholic version)
- 1/4 cup ketchup
- 3 tbsp honey
- 2 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- 2 green onions, sliced (for garnish)
- Sesame seeds for garnish (optional)
Instructions
- Place chicken pieces into the crock pot.
- In a medium bowl, whisk soy sauce, brown sugar, bourbon (or apple juice), ketchup, honey, apple cider vinegar, garlic, ginger, and red pepper flakes.
- Pour sauce mixture over the chicken and stir to coat.
- Cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
- Remove 1/4 cup of the cooking liquid, mix with cornstarch to form a slurry, then stir back into the crock pot.
- Cook on HIGH for an additional 10–15 minutes until the sauce thickens.
- Serve over rice and garnish with green onions and sesame seeds.
Notes
- Use chicken thighs for the juiciest, most tender results.
- For extra richness, add 1 tbsp butter when thickening the sauce.
- Adjust sweetness by adding more or less brown sugar depending on preference.
- Pairs well with steamed rice, noodles, or roasted vegetables.
