A refreshing and addictive salad made with crisp cucumbers, creamy ranch dressing, cheddar cheese, bacon, and green onions – a crunchy, flavorful side dish.
Ingredients
- 4 large cucumbers, diced
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/2 cup ranch dressing
- 1/4 cup mayonnaise
- 3 green onions, sliced
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- Salt, to taste
Instructions
- Wash and dice cucumbers into bite-sized pieces. Pat dry with paper towels to remove excess moisture.
- In a large bowl, combine ranch dressing, mayonnaise, garlic powder, salt, and black pepper.
- Add cucumbers, cheddar cheese, bacon, and green onions. Toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Serve cold as a side dish or light lunch.
Notes
- For extra crunch, add sunflower seeds or crushed crackers on top before serving.
- Use turkey bacon for a lighter version.
- Best served fresh, as cucumbers release water when stored too long.
