Description
Decadent chocolate cupcakes with rich and creamy chocolate frosting. A perfect treat for any occasion.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 2-4 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- In a separate large bowl, beat the sugar and eggs together until light and fluffy.
- Add the milk, oil, and vanilla extract to the egg mixture, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Slowly pour in the boiling water and mix until smooth (the batter will be thin).
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the butter until smooth and creamy.
- Gradually add the powdered sugar and cocoa powder, mixing until smooth.
- Add the vanilla extract and heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency.
- Once the cupcakes are completely cool, frost them with the chocolate frosting using a spatula or piping bag.
Notes
- Make sure the cupcakes are completely cooled before frosting to prevent the frosting from melting.
- For a richer flavor, you can add a pinch of instant espresso powder to the cupcake batter.
- The frosting can be made ahead and stored in the fridge. Just let it come to room temperature before frosting the cupcakes.
- You can decorate the cupcakes with chocolate shavings or sprinkles for an extra touch.
