Description

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons heavy cream


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a separate large bowl, beat the sugar and eggs together until light and fluffy.
  4. Add the milk, oil, and vanilla extract to the egg mixture, and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Slowly pour in the boiling water and mix until smooth (the batter will be thin).
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the frosting, beat the butter until smooth and creamy.
  11. Gradually add the powdered sugar and cocoa powder, mixing until smooth.
  12. Add the vanilla extract and heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency.
  13. Once the cupcakes are completely cool, frost them with the chocolate frosting using a spatula or piping bag.

Notes

  • Make sure the cupcakes are completely cooled before frosting to prevent the frosting from melting.
  • For a richer flavor, you can add a pinch of instant espresso powder to the cupcake batter.
  • The frosting can be made ahead and stored in the fridge. Just let it come to room temperature before frosting the cupcakes.
