Description

Dill Pickle Parmesan Chicken is a tangy, juicy, and flavorful dish made with chicken marinated in zesty dill pickle juice, coated with Parmesan and seasonings, then baked or air-fried to crispy perfection. It’s the perfect balance of savory, salty, and sour — a must-try for pickle lovers!

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup dill pickle juice (from a jar of pickles)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill (or 1 tablespoon fresh chopped dill)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil or melted butter
  • Optional garnish: chopped dill, pickle slices, or lemon wedges

Instructions

  1. Place chicken in a resealable plastic bag or shallow dish and pour pickle juice over it. Marinate for at least 2 hours or up to 8 hours in the refrigerator.
  2. Preheat oven to 400°F (200°C) or air fryer to 380°F (190°C). Line a baking sheet with parchment paper or lightly grease an air fryer basket.
  3. Remove chicken from the marinade and pat dry with paper towels. (Discard marinade.)
  4. In a small bowl, mix Parmesan, garlic powder, onion powder, dill, paprika, and black pepper.
  5. Brush chicken lightly with olive oil or butter, then coat evenly with the Parmesan mixture on both sides.
  6. For Baking: Place chicken on the baking sheet and bake for 25–30 minutes, or until golden and cooked through (internal temp 165°F / 74°C).
  7. For Air Frying: Cook for 16–18 minutes, flipping halfway through, until crispy and cooked through.
  8. Let rest for 5 minutes before slicing. Garnish with fresh dill, pickle slices, or a squeeze of lemon for extra brightness.

Notes

  • Marinating in pickle juice makes the chicken tender and flavorful — similar to buttermilk, but tangier.
  • Use freshly grated Parmesan for the crispiest crust.
  • Try adding crushed pork rinds or breadcrumbs for extra crunch.
  • Pairs perfectly with mashed potatoes, coleslaw, or roasted veggies.
