Description

Easy Cowboy Butter Chicken is a juicy, pan-seared chicken dish coated in a zesty, buttery sauce packed with garlic, lemon, herbs, and spices. It’s a quick, flavorful meal that pairs perfectly with veggies, rice, or bread.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 cup unsalted butter (1 stick)
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts and cook for 6–7 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt the butter over medium heat.
  5. Add garlic and sauté for 30 seconds until fragrant.
  6. Stir in Dijon mustard, lemon juice, crushed red pepper flakes, Worcestershire sauce, and smoked paprika.
  7. Reduce heat to low and simmer for 1–2 minutes until the sauce thickens slightly.
  8. Return the chicken to the skillet, spooning the cowboy butter sauce over the top.
  9. Sprinkle with fresh parsley and chives before serving.

Notes

  • For extra flavor, marinate chicken in a bit of lemon juice and olive oil before cooking.
  • This sauce also works well on steak, shrimp, or grilled vegetables.
  • Adjust spice level by adding more or less crushed red pepper flakes.
