Easy Cowboy Butter Chicken is a juicy, pan-seared chicken dish coated in a zesty, buttery sauce packed with garlic, lemon, herbs, and spices. It’s a quick, flavorful meal that pairs perfectly with veggies, rice, or bread.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 cup unsalted butter (1 stick)
- 3 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 tsp crushed red pepper flakes
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
Instructions
- Season the chicken breasts with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 6–7 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt the butter over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in Dijon mustard, lemon juice, crushed red pepper flakes, Worcestershire sauce, and smoked paprika.
- Reduce heat to low and simmer for 1–2 minutes until the sauce thickens slightly.
- Return the chicken to the skillet, spooning the cowboy butter sauce over the top.
- Sprinkle with fresh parsley and chives before serving.
Notes
- For extra flavor, marinate chicken in a bit of lemon juice and olive oil before cooking.
- This sauce also works well on steak, shrimp, or grilled vegetables.
- Adjust spice level by adding more or less crushed red pepper flakes.
