English Muffin Breakfast Pizza is a quick, fun, and delicious breakfast twist featuring toasted English muffins topped with fluffy scrambled eggs, crispy bacon or sausage, melty cheese, and fresh herbs. Perfect for busy mornings, brunch, or even breakfast-for-dinner!
Ingredients
- 4 English muffins, split in half
- 1 tablespoon butter or olive oil
- 4 large eggs
- 2 tablespoons milk or cream
- 1/2 cup cooked bacon or breakfast sausage, crumbled
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/4 cup diced bell peppers (optional)
- 2 tablespoons diced red onion (optional)
- Salt and black pepper, to taste
- 1 tablespoon chopped parsley or chives (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Split the English muffins in half and lightly toast them in the oven for 4–5 minutes until crisp.
- Meanwhile, whisk eggs, milk, salt, and pepper in a bowl. Melt butter in a nonstick skillet over medium heat and scramble eggs until just set but still soft. Remove from heat.
- Top each toasted English muffin half with a spoonful of scrambled eggs.
- Add crumbled bacon or sausage on top, followed by cheese, bell peppers, and onions if desired.
- Bake in the oven for 8–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped parsley or chives before serving.

- For a vegetarian option, use sautéed mushrooms, spinach, or roasted veggies instead of meat.
