Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons strong brewed coffee (cooled)
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup butter, softened (for frosting)
  • 1 cup powdered sugar
  • 2 tablespoons strong brewed coffee (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1 tablespoon cocoa powder (for frosting)
  • 1/4 cup heavy cream (for frosting)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, mix the melted butter and sugar until combined. Add the eggs and vanilla extract, and whisk until smooth.
  3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Fold in the brewed coffee and chocolate chips until well distributed.
  5. Pour the brownie batter into the prepared pan and spread it evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Let the brownies cool in the pan on a wire rack for 10 minutes.
  7. For the frosting, beat the softened butter with powdered sugar, brewed coffee, vanilla extract, and cocoa powder until smooth and creamy. Gradually add the heavy cream and mix until fluffy.
  8. Once the brownies are completely cooled, spread the coffee frosting evenly over the brownies.
  9. Let the frosting set for about 10 minutes before cutting into squares and serving.
