Ingredients

  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potatoes with olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper until well coated.
  3. Spread sweet potatoes evenly on the baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and crispy on the edges.
  5. Remove from oven and sprinkle with extra Parmesan and fresh parsley before serving.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end of roasting.
