Ingredients
- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potatoes with olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper until well coated.
- Spread sweet potatoes evenly on the baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway through, until golden and crispy on the edges.
- Remove from oven and sprinkle with extra Parmesan and fresh parsley before serving.
Notes
- For extra crispiness, broil for 2–3 minutes at the end of roasting.
- Pairs well with grilled chicken, steak, or fish.
- Can substitute Parmesan with Pecorino Romano for a sharper flavor.
