Description

A flavorful and balanced bowl featuring crispy chicken glazed with hot honey, served over rice with fresh vegetables and toppings for a spicy-sweet kick.

Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1/2 cup hot honey
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 1 cup steamed broccoli florets
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 2 tbsp green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Season chicken pieces with garlic powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook chicken until golden and cooked through, about 6-8 minutes.
  3. In a small bowl, whisk together hot honey and soy sauce.
  4. Pour the hot honey mixture over the cooked chicken and stir to coat. Simmer for 2-3 minutes until slightly thickened.
  5. Assemble bowls by dividing rice among serving bowls.
  6. Top with hot honey chicken, steamed broccoli, shredded carrots, and avocado slices.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • Adjust the level of heat by using more or less hot honey.
  • Swap rice for quinoa or cauliflower rice for a lighter option.
  • Great for meal prep – store components separately and assemble before eating.
