Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Jalapeño Peach Glaze:
- 1 cup peach preserves or jam
- 1 fresh jalapeño, finely chopped (remove seeds for less heat)
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 clove garlic, minced
- 1 tsp Dijon mustard (optional)
- 1 tbsp butter (for finishing)
- Fresh chopped parsley or green onions for garnish
Instructions
- Season chicken with salt, pepper, garlic powder, and paprika on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C). Remove from skillet and set aside.
- In the same skillet, add peach preserves, chopped jalapeño, vinegar, soy sauce, garlic, and Dijon mustard. Stir and bring to a gentle simmer for 3–4 minutes until slightly thickened.
- Stir in butter for a glossy finish, then return chicken to the skillet, coating it well in the sauce.
- Simmer for an additional 2–3 minutes, spooning the glaze over the chicken as it cooks.
- Serve hot, garnished with fresh parsley or green onions. Great with rice, roasted veggies, or mashed potatoes.
Notes
- Adjust spice level by adding more or fewer jalapeño seeds.
- Peach preserves can be swapped for apricot or mango jam for a twist.
- For grilled chicken, brush the glaze on during the last few minutes of cooking instead of simmering.
- This recipe also works beautifully with pork chops or salmon.
