Description

A bold and flavorful dish featuring tender, juicy chicken glazed with a sweet and spicy jalapeño-peach sauce — the perfect balance of heat and sweetness for an easy yet impressive dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Jalapeño Peach Glaze:
  • 1 cup peach preserves or jam
  • 1 fresh jalapeño, finely chopped (remove seeds for less heat)
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp butter (for finishing)
  • Fresh chopped parsley or green onions for garnish


Instructions

  1. Season chicken with salt, pepper, garlic powder, and paprika on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C). Remove from skillet and set aside.
  3. In the same skillet, add peach preserves, chopped jalapeño, vinegar, soy sauce, garlic, and Dijon mustard. Stir and bring to a gentle simmer for 3–4 minutes until slightly thickened.
  4. Stir in butter for a glossy finish, then return chicken to the skillet, coating it well in the sauce.
  5. Simmer for an additional 2–3 minutes, spooning the glaze over the chicken as it cooks.
  6. Serve hot, garnished with fresh parsley or green onions. Great with rice, roasted veggies, or mashed potatoes.

Notes

  • Adjust spice level by adding more or fewer jalapeño seeds.
  • Peach preserves can be swapped for apricot or mango jam for a twist.
  • For grilled chicken, brush the glaze on during the last few minutes of cooking instead of simmering.
  • This recipe also works beautifully with pork chops or salmon.
