Description

A tender and flavorful roast chicken seasoned with zesty lemon and smoky paprika, perfect for a comforting weeknight dinner.


Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 lemon, zested and halved
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 onion, quartered
  • 2 tbsp fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. In a small bowl, mix olive oil, paprika, smoked paprika, lemon zest, garlic, salt, pepper, thyme, and oregano.
  4. Rub the seasoning mixture all over the chicken, including under the skin where possible.
  5. Place the lemon halves and onion quarters inside the cavity of the chicken.
  6. Roast the chicken for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Allow the chicken to rest for 10 minutes before carving.
  8. Garnish with chopped parsley and serve warm.

Notes

  • For extra crispy skin, leave the chicken uncovered in the fridge for 2 hours before roasting.
  • Use smoked paprika for a deeper flavor.
  • Save pan drippings to make a simple gravy.
