Sweet, smoky, and savory — these Maple Bacon Carrots are roasted to caramelized perfection and glazed with maple syrup and crispy bacon. An irresistible side dish that balances indulgence and comfort in every bite.
Ingredients
- 2 lbs carrots, peeled and cut into sticks (or use baby carrots)
- 4 slices thick-cut bacon, chopped
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 1 tbsp brown sugar (optional, for extra caramelization)
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
- Spread chopped bacon on the prepared sheet and bake for 5–7 minutes until it begins to crisp. Remove and set aside, leaving bacon fat on the sheet.
- Add carrots to the same baking sheet and drizzle with olive oil, maple syrup, brown sugar, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Return to the oven and roast for 25–30 minutes, tossing halfway through, until carrots are tender and caramelized.
- Sprinkle cooked bacon over the carrots and toss gently. Roast for an additional 5 minutes to allow flavors to meld.
- Remove from oven and garnish with chopped parsley before serving.
Notes
- For extra heat, add a pinch of cayenne pepper to the glaze.
- Use turkey bacon for a lighter, halal-friendly version.
- Substitute honey for maple syrup if preferred.
