Description

Sweet, smoky, and savory — these Maple Bacon Carrots are roasted to caramelized perfection and glazed with maple syrup and crispy bacon. An irresistible side dish that balances indulgence and comfort in every bite.


Ingredients

  • 2 lbs carrots, peeled and cut into sticks (or use baby carrots)
  • 4 slices thick-cut bacon, chopped
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1 tbsp brown sugar (optional, for extra caramelization)
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Spread chopped bacon on the prepared sheet and bake for 5–7 minutes until it begins to crisp. Remove and set aside, leaving bacon fat on the sheet.
  3. Add carrots to the same baking sheet and drizzle with olive oil, maple syrup, brown sugar, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Return to the oven and roast for 25–30 minutes, tossing halfway through, until carrots are tender and caramelized.
  5. Sprinkle cooked bacon over the carrots and toss gently. Roast for an additional 5 minutes to allow flavors to meld.
  6. Remove from oven and garnish with chopped parsley before serving.

Notes

  • For extra heat, add a pinch of cayenne pepper to the glaze.
  • Use turkey bacon for a lighter, halal-friendly version.
  • Substitute honey for maple syrup if preferred.
