Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1 1/2 cups pitted cherries (fresh or canned, drained)
- 1/2 cup chopped dark chocolate (optional)
- 1 cup powdered sugar (for glaze)
- 2-3 tbsp milk or cherry juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round or loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Alternate adding dry ingredients and milk, mixing until just combined.
- Fold in cherries and chopped dark chocolate if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely before glazing.
- Mix powdered sugar with milk or cherry juice and drizzle over cake before serving.
