Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups pitted cherries (fresh or canned, drained)
  • 1/2 cup chopped dark chocolate (optional)
  • 1 cup powdered sugar (for glaze)
  • 2-3 tbsp milk or cherry juice (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round or loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Alternate adding dry ingredients and milk, mixing until just combined.
  6. Fold in cherries and chopped dark chocolate if using.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool completely before glazing.
  10. Mix powdered sugar with milk or cherry juice and drizzle over cake before serving.
