Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil or melted butter
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- Optional add-ins: chocolate chips, blueberries, nuts, or fruit
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk oil, milk, eggs, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Fold in optional add-ins if using.
- Divide batter evenly among muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Cool slightly before serving.
