Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups chocolate chips (milk, dark, or semi-sweet)
  • 1 tbsp coconut oil or shortening (for melting chocolate)


Instructions

  1. In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth.
  2. Roll mixture into 1-inch balls and place on a parchment-lined tray.
  3. Freeze for 20–30 minutes until firm.
  4. Melt chocolate chips with coconut oil until smooth.
  5. Dip each peanut butter ball into melted chocolate, coating fully.
  6. Place back on parchment and let chocolate set at room temperature or refrigerate.
  7. Store chilled until ready to serve.
