Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple with juice
  • 1/2 cup sour cream
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup crushed pineapple (drained, for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add eggs, oil, vanilla extract, crushed pineapple with juice, and sour cream. Mix until well combined.
  4. Pour batter into prepared pan and spread evenly.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cake to cool completely.
  7. Whip heavy cream with powdered sugar until stiff peaks form.
  8. Spread whipped cream over the cooled cake and top with drained crushed pineapple.
  9. Chill for at least 1 hour before serving.
