Ingredients
- 1 cup shelled pistachios, finely chopped
- 1/2 cup almond flour
- 1/4 cup honey
- 2 tablespoons coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoons chopped pistachios for coating (optional)
Instructions
- Add chopped pistachios and almond flour to a mixing bowl.
- Stir in honey, melted coconut oil, vanilla extract, cinnamon, and salt.
- Mix until a sticky dough forms.
- Scoop small portions and roll into bite-sized balls.
- Roll the bites in extra chopped pistachios if desired.
- Place on a tray and refrigerate for at least 30 minutes to set.
- Serve chilled or at room temperature.
