Ingredients

  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons chopped pistachios for coating (optional)


Instructions

  1. Add chopped pistachios and almond flour to a mixing bowl.
  2. Stir in honey, melted coconut oil, vanilla extract, cinnamon, and salt.
  3. Mix until a sticky dough forms.
  4. Scoop small portions and roll into bite-sized balls.
  5. Roll the bites in extra chopped pistachios if desired.
