Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups pumpkin puree (canned or fresh)
  • 3 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • Salt to taste
  • Black pepper to taste
  • Optional garnish: pumpkin seeds or fresh cream drizzle


Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add chopped onion and sauté until soft and translucent.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in pumpkin puree and vegetable broth.
