Description

Tender almond-flavored snowball cookies filled with sweet raspberry jam and rolled in powdered sugar for a festive, melt-in-your-mouth treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 tsp almond extract
  • 2 cups all-purpose flour
  • 1 cup finely ground almonds or almond flour
  • 1/4 tsp salt
  • 1/2 cup raspberry jam
  • 1 cup powdered sugar (for coating)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Mix in the almond extract, then add flour, ground almonds, and salt. Stir until a soft dough forms.
  4. Scoop a tablespoon of dough, flatten it, and place a small amount of raspberry jam in the center.
  5. Wrap the dough around the jam to form a sealed ball. Repeat with remaining dough.
  6. Place the cookie balls on the baking sheet and bake for 12–15 minutes, or until the bottoms are lightly golden.
  7. Allow cookies to cool slightly, then roll them in powdered sugar while warm. Once fully cooled, roll again for a thick snowy coating.

Notes

  • Chilling the dough for 15 minutes makes it easier to handle if too soft.
  • Use a thick raspberry jam to prevent leaking during baking.
