Description

A smooth and elegant Italian dessert made with lightly sweetened vanilla-infused cream, set with gelatin for a silky, melt-in-your-mouth texture.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 2 tsp powdered gelatin
  • 3 tbsp cold water
  • 1 vanilla bean (or 2 tsp pure vanilla extract)
  • Pinch of salt

Instructions

  1. Sprinkle gelatin over cold water in a small bowl and let bloom for 5 minutes.
  2. In a saucepan, combine heavy cream, milk, sugar, salt, and vanilla bean (split and scraped).
  3. Heat gently over medium-low heat until sugar dissolves and mixture is hot but not boiling.
  4. Remove from heat and discard vanilla bean.
  5. Stir in bloomed gelatin until fully dissolved.
  6. Pour mixture into serving glasses or molds.
  7. Let cool slightly, then refrigerate for at least 4 hours until set.
  8. Serve chilled, optionally topped with berries or fruit sauce.

Notes

  • Do not boil the cream to preserve smooth texture.
  • Chill uncovered for the first 30 minutes to prevent condensation.
  • Can be made a day ahead.
