Description

The Sizzling Korean Chicken Burger is a bold and flavorful sandwich featuring juicy marinated chicken glazed in spicy-sweet Korean gochujang sauce, layered with crisp lettuce, pickled cucumbers, and creamy mayo on a toasted brioche bun. It’s the perfect fusion of heat, crunch, and umami in every bite.


Ingredients

    • For the Chicken Marinade:
    • 1 lb boneless, skinless chicken thighs (or breasts, pounded thin)
    • 2 tablespoons gochujang (Korean chili paste)
    • 1 tablespoon soy sauce
    • 1 tablespoon honey
    • 1 tablespoon sesame oil
    • 1 teaspoon rice vinegar
    • 2 cloves garlic, minced
    • 1 teaspoon grated ginger

 

    • For the Sauce:
    • 2 tablespoons mayonnaise
    • 1 tablespoon gochujang
    • 1 teaspoon honey
    • 1/2 teaspoon rice vinegar

 

  • For Assembly:
  • 4 brioche buns, toasted
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup thinly sliced cucumber (or pickled cucumber)
  • 1/4 small red onion, thinly sliced (optional)
  • 1 teaspoon sesame seeds (optional garnish)


Instructions

  1. In a medium bowl, whisk together gochujang, soy sauce, honey, sesame oil, rice vinegar, garlic, and ginger.
  2. Add chicken thighs to the marinade, ensuring they’re well coated. Cover and refrigerate for at least 30 minutes (up to 8 hours for deeper flavor).
  3. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 4–5 minutes per side, until cooked through and lightly charred. Brush with extra marinade while cooking for a glaze effect.
  4. In a small bowl, mix mayonnaise, gochujang, honey, and rice vinegar to make the spicy mayo sauce.
  5. Toast brioche buns lightly and spread the spicy mayo on both sides.
  6. Assemble the burger: layer lettuce, cooked chicken, cucumber slices, and red onion (if using). Sprinkle with sesame seeds and top with the other bun half.
  7. Serve hot with fries, kimchi, or a crisp side salad.

Notes

  • Adjust heat by reducing or increasing the amount of gochujang.
  • Grill or air-fry the chicken for a smoky, charred flavor.
  • For a twist, add melted cheese or a fried egg on top.
