Description

Soft and chewy cookies filled with creamy cheesecake and swirled with sweet strawberry preserves, creating a dessert that tastes like mini strawberry cheesecakes in cookie form.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 cup strawberry preserves
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla extract (for filling)


Instructions

  1. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  2. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg, vanilla extract, and milk until combined.
  4. Gradually add dry ingredients to wet mixture and mix until dough forms. Chill for 30 minutes.
  5. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop about 2 tablespoons of cookie dough and flatten slightly. Add 1 teaspoon of cheesecake filling and 1/2 teaspoon strawberry preserves in the center. Cover with another tablespoon of dough and seal edges.
  8. Place cookies on baking sheet 2 inches apart.
  9. Bake for 12–14 minutes, until edges are lightly golden. Let cool on the pan before transferring to a wire rack.
