Ingredients

  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed golden sandwich cookies
  • 1/2 cup crushed freeze-dried strawberries
  • 2 tablespoons unsalted butter, melted
  • 1 cup white chocolate chips (optional, for coating)

Instructions

  1. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth and creamy.
  2. Chill the mixture for 30 minutes to firm up.
  3. Mix crushed cookies, crushed freeze-dried strawberries, and melted butter in a separate bowl.
  4. Scoop cheesecake mixture into small balls.
  5. Dip cheesecake balls in melted white chocolate if using.
  6. Roll each ball in the strawberry crunch mixture until fully coated.
  7. Place bites on a lined tray and refrigerate for at least 1 hour before serving.
