Description

A decadent Strawberry Shortcake Cheesecake featuring a creamy cheesecake layer, sweet strawberry topping, and a buttery shortcake crumble crust. This stunning dessert combines classic strawberry shortcake flavors with rich cheesecake texture.

Ingredients

  • 2 cups crushed golden sandwich cookies or vanilla wafers
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup heavy whipping cream
  • 1 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar (for strawberries)
  • 1/2 cup crushed golden cookies (for topping)
  • 2 tbsp strawberry gelatin powder (optional for color)

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and wrap bottom with foil.
  2. Mix crushed cookies with melted butter and press firmly into the bottom of the pan to form crust.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing just until combined. Stir in vanilla extract and sour cream.
  6. Pour cheesecake batter over cooled crust.
  7. Bake for 50-60 minutes until center is slightly set but still jiggly.
  8. Turn off oven, crack door open, and let cheesecake cool gradually for 1 hour.
  9. Refrigerate for at least 4 hours or overnight.
  10. Mix diced strawberries with sugar and let sit 10 minutes to release juices.
  11. Whip heavy cream until soft peaks form and spread over chilled cheesecake.
  12. Top with sweetened strawberries and sprinkle crushed cookies (and gelatin powder if using) for the shortcake effect.

Notes

  • Avoid overmixing to prevent cracks.
