Description

Stuffed Mashed Potato Nests are crispy, golden nests made from creamy mashed potatoes filled with a savory mixture of cheese, veggies, or meat. These bite-sized delights are perfect as an appetizer, side dish, or party snack.


Ingredients

    • 3 cups mashed potatoes (leftover or freshly made)
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1 tablespoon butter, melted
    • Salt and pepper, to taste
    • Cooking spray or oil, for greasing

 

  • For the Filling:
  • 1 tablespoon olive oil
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup cooked chicken, bacon, or mushrooms (optional)
  • 1/2 cup shredded mozzarella cheese
  • Salt and herbs to taste


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a muffin tin with cooking spray or oil.
  2. In a large bowl, mix the mashed potatoes with cheddar cheese, Parmesan, egg, melted butter, salt, and pepper until smooth and well combined.
  3. Scoop about 2 tablespoons of the potato mixture into each muffin cup. Use the back of a spoon to press the potatoes along the sides and bottom, forming a small ‘nest’ or cup shape.
  4. Bake the nests for 15–20 minutes, or until lightly golden and firm.
  5. Meanwhile, prepare the filling. Heat olive oil in a small pan and sauté bell peppers, onions, and any protein of your choice until cooked and slightly caramelized. Season with salt and herbs.
  6. Remove the potato nests from the oven and spoon the filling into each nest. Top with a sprinkle of mozzarella cheese.
  7. Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  8. Allow to cool slightly before removing from the muffin tin. Serve warm as appetizers or side dishes.
