Description

A copycat version of Taco Bell Fiesta Potatoes featuring crispy seasoned potatoes topped with warm nacho cheese sauce and cool sour cream, perfect as a snack or side dish.


Ingredients

  • 700 g potatoes, peeled and diced into small cubes
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 2 tbsp chopped green onions (optional)


Instructions

  1. Preheat the oven to 220°C (425°F) or prepare an air fryer.
  2. Place diced potatoes in a bowl and toss with vegetable oil, paprika, chili powder, garlic powder, onion powder, salt, and black pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Bake for 30–35 minutes, flipping halfway through, until golden and crispy. Alternatively, air fry at 200°C (400°F) for 15–18 minutes.
  5. Heat the nacho cheese sauce according to package instructions.
  6. Transfer the crispy potatoes to a serving dish.
  7. Drizzle warm nacho cheese sauce over the potatoes.
  8. Top with sour cream and garnish with chopped green onions if desired.
  9. Serve immediately while hot.

Notes

  • For extra crispiness, soak the potatoes in cold water for 30 minutes and dry thoroughly before seasoning.
  • You can substitute vegan cheese and sour cream for a dairy-free version.
