Description

Ingredients
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon

- 4 large eggs
- 1/2 cup granulated sugar
- 1/4 cup molasses
- 1 tsp vanilla extract
- 1/4 cup powdered sugar (for dusting towel)
- 8 oz mascarpone cheese
- 1 cup heavy whipping cream
- 1/3 cup powdered sugar
- 1 tsp vanilla extract (for filling)
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.
- In a medium bowl, whisk together flour, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
- In a large bowl, beat eggs and sugar until thick and pale, about 3 minutes. Mix in molasses and vanilla.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Spread the batter evenly into the prepared pan. Bake for 10–12 minutes, or until the cake springs back when touched.
- Immediately turn the cake onto a clean kitchen towel dusted with powdered sugar. Carefully remove the parchment paper and roll the cake up in the towel while warm. Cool completely.
- To make the filling, beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy.
- Unroll the cooled cake, spread the filling evenly over the surface, and roll it back up tightly.
- For the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla; beat until fluffy.
- Frost the outside of the cake to resemble a log. Use a fork to create bark-like texture if desired.
- Chill for at least 1 hour before serving. Dust with powdered sugar for a snowy effect.
