Ingredients

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for dusting towel)
  • 8 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.
  2. In a medium bowl, whisk together flour, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat eggs and sugar until thick and pale, about 3 minutes. Mix in molasses and vanilla.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Spread the batter evenly into the prepared pan. Bake for 10–12 minutes, or until the cake springs back when touched.
  6. Immediately turn the cake onto a clean kitchen towel dusted with powdered sugar. Carefully remove the parchment paper and roll the cake up in the towel while warm. Cool completely.
  7. To make the filling, beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy.
  8. Unroll the cooled cake, spread the filling evenly over the surface, and roll it back up tightly.
  9. For the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla; beat until fluffy.
  10. Frost the outside of the cake to resemble a log. Use a fork to create bark-like texture if desired.
  11. Chill for at least 1 hour before serving. Dust with powdered sugar for a snowy effect.
