Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, finely chopped (optional)
- 2 cloves garlic, minced
- 2 tbsp olive oil (plus extra for brushing)
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1/2 cup breadcrumbs (optional, for crusted version)
- Toothpicks or kitchen twine (for securing rolls)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- Place the chicken breasts between two sheets of plastic wrap and gently pound to an even thickness (about 1/2 inch).
- In a bowl, combine feta cheese, spinach, sun-dried tomatoes, garlic, oregano, and a drizzle of olive oil. Mix well.
- Season both sides of the chicken with salt, pepper, and paprika.
- Place 2–3 tablespoons of the feta mixture in the center of each chicken breast, then roll tightly from one end to the other. Secure with toothpicks or tie with kitchen twine.
- Brush each chicken roll with olive oil and, if desired, coat lightly in breadcrumbs for a crispy finish.
- Heat a skillet over medium heat and sear the chicken rolls on all sides until golden brown, about 2–3 minutes per side.
- Transfer to the prepared baking dish and bake for 20–25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
- Remove from oven, rest for 5 minutes, then slice into medallions and serve hot.
