Description

A hearty, cheesy, and irresistibly comforting casserole made with ground beef, creamy sauce, and crunchy Doritos — the ultimate crowd-pleaser that’s equal parts indulgent and easy to make.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1/2 medium onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (drained slightly)
  • 1/2 cup sour cream
  • 1 tsp taco seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese (divided)
  • 1 bag (9.75 oz) Nacho Cheese Doritos, lightly crushed
  • Green onions or jalapeños, for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook ground beef and diced onion until beef is browned and onion is softened. Drain excess grease.
  3. Stir in cream of mushroom soup, Rotel, sour cream, taco seasoning, garlic powder, salt, and pepper. Mix until combined and creamy.
  4. Add 1 cup of shredded cheddar cheese to the mixture and stir until melted.
  5. Spread half of the crushed Doritos evenly on the bottom of the baking dish.
  6. Pour the beef mixture over the Doritos and spread evenly.
  7. Top with the remaining crushed Doritos and sprinkle the rest of the cheddar cheese on top.
  8. Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with sliced green onions or jalapeños before serving if desired.

Notes

  • Substitute chicken for beef and cream of chicken soup for a Tex-Mex chicken version.
  • Add black beans, corn, or bell peppers for more texture and flavor.
  • Use Cool Ranch or Spicy Sweet Chili Doritos for a fun flavor twist.
  • Leftovers reheat well — just cover and bake at 325°F for 15 minutes.
